This vegetable soup recipe is really versatile. you can whatever vegetables  that are in season, or this is great recipe to use up leftever veggies from the night before.

Best vegetable soup:


This soup is so delicious and easy to make. it just take some chopping and a bit of simmering until you have got a soup everyone love. it calls for using fresh vegetables for best result, however you can also used canned ones.

Vegetables for soup:


you can put whatever vegetables you like in this soup from seasonal fresh vegetables to frozen.
here's a list of what i used.
  • Bell papers
  • Carrots
  • Tomatos
  • potatos
  • Corn
  • Peas
  • onion or garlic
  • Shredded Cabbage




How To Make Vegetable Soup:


i usually make this on the stovetop. its pretty quick to throw together but it does really well in both the slow cooker and the instant pot. once you try this soup recipe, you will never look at the store bought stuff the same way again.
  • adding extra flavour herbs and spice.
  • add paprika and curry powder.
  • Red paper flaks will added a spicy kick.
  • fresh or dried herbs as a basil, thyme and oregano etc.

Ingredients:


  1. 2 tbsp olive oil
  2. 1 1/2 cup chopped onion.
  3. 2 cup chopped carrots (about 5)
  4. 1 1/4 cup chopped celery
  5. 4 cloves garlic (minced)
  6. 2 tomato undrained.
  7. 3 cups peeled and 1/2- inch thick diced potatos (3 medium).
  8. 1/3 cup chopped parsley.
  9. 2 bay leaves.
  10. 1/2tbsp dried thyme.
  11. salt and freshly ground black paper.
  12. 1 1/4 cup fresh or frozen peas.
  13. 1 cup chopped green cabbage.

Instructions:

  • heat olive oil in a large pot over medium-high heat

  • add onion, carrots and celery and saute 4 mints then added garlic and saute 30 sec longer.

  • added in broth tomatoes, potatoes, parsaly, bay leaves, thyme and season with salt and paper to taste.

  • brings to boil then add green beans.

  • reduce heat to medium-low, cover and simmer until potatoes are almost fully tender, about 20,30 mints.
  • serve it as a started for lunch and dinner and its ideal filling low calories food item for weight loss or healthy diet.

Tips:

For more flavor add in more dried herbs, other good herbs to add include basil oregano etc.
Nother option to add more flavor is use homemade chicken stock.
