This healthy fried rice recipe is loaded with vegetables and made with whole grain brown rice. kid-friendly and naturally gluten free



Ingredients:
  • 3 cups cooked and chilled brown rice.
  • 2tbsp olive oil.
  • 1 cup diced carrots.
  • 1 cup chopped yellow onion.
  • 4 cloves garlic, minced.
  • 1tbsp peeled and minced fresh ginger.
  • 1 1/2 cups small diced broccoli florets.
  • 3/4 cups small diced red bell paper.
  • 2 eggs.
  • 3/4 cup frozen peas.
  • 3/4 cup of boiled corn.
  • 3-4tbsp soy sauce, to taste
  • 1tbsp sesame oil.
  • 1tbsp Salt or as per taste.
Instruction

  • Prep the veggies (diced the onion, chop the bell paper etc)
  • Heat oil in a large non-sick wok over medium high heat, then add the carrots, onion, garlic and ginger.
  • Add broccoli and bell paper and saute until the veggies are soft.
  • move the veggies to the side of the skillet and crack in the eggs to scramble.
  • add  in the peas, corn, rice, soy sauce, salt and sesame oil and continue cooking  until heated through.
tips:

  1. i like to cook the brown rice with a little less water than the than the package calls for so that it soak up the soy sause and vegetables.
  2. dice the veggies into even-sized pieces so they cook at the same time.
  3. you can add salt or soy sauce as per your state.
