pasta is favorite food for most of us, especially for kids. usually i am bored of store-bought pasta sauces either tomato or creamy white sauce. so its better to make our own favorite pasta sauce with variations and healthy twists. i love experimenting various ingredients for pasta sauces. my favorite is tomato and onion based sauce which used to make this dish.

this spicy healthy pasts is close to my heart because, it strikes my mind is close to my mind first whenever i crave for pasta.

pasta are considered as a pillar of the mediterranean diet. generally pasta are made of drum wheat, water and eggs but nowadays it is available in variation of gluten-free, vegan and many forms that suits special diets. it can be eaten in a large variety of sauces and accompaniments, fresh fruits, vegetables, breads nuts and seeds. gluten-free pasta is good for this healthy pasta recipe.

this spicy healthy pasta is cooked with onion tomato base. in addition, i have added carrots, green peas and cabbage. the choice of vegetables is yours. i can suggest some veggies which taste better with this spicy healthy vegetable pasta. vegetables like beans, broccoli, sweet corn an bell peppers. to make this recipe protein rich, you can added red beans, black beans, mushroom and eggs.

How to make spicy healthy vegetable Pasta:

make sure all ingredients are ready before start this recipe.

pasta:

any shape of pasta will do and you can swap in your favorite gluten-free or whole grain pasta if you like.

Vegetables:

the type of vegetables are up to you, but the we love carrots, bell peppers, leafy greens, peas, corn and cabbage. options are endless here.

onion garlic and tomato paste:

these provide a base flavor for the simple sauce.

Herbs and spices:

when we have it in the kitchen, we add fresh basil. other herbs work, too( parsley, mint and different flavors )




Recipe:

spicy healthy vegetable pasta is so delicious and made with tomatoes, onions, fresh  and healthy veggies and herbs. this pasta recipe is is extremely flavorful, quick and family favorite recipe.

Ingredients:

For boiling pasta:
  • 1 1/2 cups pasta.
  • 1tbsp salt
  • 1tbsp oil
For spicy pasta:
  • 1tbsp oil 
  • 1/2tbsp cumin seeds 
  • 1tbsp garlic chopped
  • 1/4 cup onion
  • 1/4cup tomatoes
  • 1/4 cup carrots chopped
  • 1/4 cup peas
  • 1/4 cup cabbage
  • 1/2tbsp red chili powder
  • 1/2tbsp basil
  • 1tbsp parsley
  • salt as required
  • mint leaves for garnish

Instructions:

For cooking pasta:
  1. boil water in a large pot, and add pasta in it along with salt and oil. cook as per the package instructions. the pasta i had to cook for about 20 mints.
  2. when the pasta is perfectly cooked. drain the pasta in a collander to drain off water. keep inside until pasta sauce is ready;.

Instructions to make spicy pasta:

  1. heat a large pan, add cumin seeds let it crackle. then add slit green chili. saute for a minute.
  2. add chopped garlic, onion and salt, saute until onion becomes soft. don't brown the onion. later add tomatoes and cook until it becomes soft and mushy.
  3. add spice powder like red chili powder, black pepper, parsley and basil. saute it well with 1/4 cup of water to prevent sticking at the bottom. cook until the raw smell goes off.
  4. add carrots. green peas and cabbage with little more water close and cook until vegetables are done.
  5. now add the cooked pasta over the spicy sauce. gently stir in or toss the pasta with spicy sauce. so the pasta would evenly mix with the sauce.
  6. close the lid and cook for 2 minutes in low heat, so that the spice and flavor would infuse well with pasta. don not miss the step, this makes difference and taste better.
  7. garnish with mint leaves and some parsley.
note:
          this healthy spicy vegetable pasta can be stored in refrigerator for 2 days. reheat for 2 mints in microwave even before eating.
